Healthy Muffins?!!!

Ingredients (for 6 muffins):

Half a Butternut squash (there’s a vegetable in my muffins!!)
100g Brown Rice flour
150ml Soy milk
0.5tsp Bicarbonate of soda
1 Egg white
Grated Lemon rind (of 1 lemon)
1 tsp Lemon juice
1 tsp Vanilla extract

20c 20-25 minutes
